Chicken Stock

I have bones! I have bones! About two chicken's worth, in my freezer.

Anyone know a basic recipe so I can attempt my very first chicken stock?

  1. I just throw 'em in a crockpot and let it simmer.

Can add onion, carrots, celery, garlic, etc. Whatever vegetables you have on hand (or dehydrated).

I don't season it because I season when I later use.

  2. Hm ... if you can simmer a long time and there's some meat on the bones, plenty.

So in my 4 quart crockpot, I fill almost clear up with stock and let it simmer for hours. It does boil down so I get 2-3 quarts overall once I strain everything out.

  3. Hey, just read an article in the newspaper (Judy Walker is a doll and clearly she heard your request): http://www.nola.com/food/index.ssf/2009/10/on_halloween_rattling_bones_ar.html

It talks about the use of bones in cuisine here, but ends up with a crockpot chicken broth recipe!
