quinoa tzatziki bowls

I see reels from various people on Facebook from various sources, and I like to see some of the food preparation ideas.

This was from Liam Layton, reposting from @mariannas_pantry.  

They stacked these in jars which were then dumped out and mixed up for a salad serving.  It looks tasty and satisfying so I may try.  I'll definitely be eating this when I'm drowning in cucumbers this summer, but I may not wait!  I haven't had tzatziki in forever.  

- container of tzatziki
- quinoa (I'd maybe cook a cup of it) 
- chopped cucumber, bell pepper, red onion
- chickpeas 
- Kalamata olives
- banana peppers
- feta

leftover cornbread casserole

 I seem to often have a lot of leftover sourdough cornbread, which I freeze.  So in interests of emptying the freezer, I decided to make something with it.  Got a few ideas from online, but I wanted it more about vegetables and less about eggs/breakfast.  I"ll edit depending on how it turns out. 

Ingredients:

  • about 4 cups of cornbread, preferably day old and dried up, cut into about 1" cubes/crumbled
  • 1 onion, chopped
  • 1/2# hot Italian sausage
  • peppers (i used jalapeno peppers and a can of green chiles)  
  • 4 eggs
  • 2 cup milk
  • salt & pepper
  • garlic powder
  • vegetables (I used green beans today but other things would be good)
  • 1 cup shredded cheese 

Heat oven to 375 degrees.  If cornbread isn't dried up, but it in the oven for about 10 minutes to try to dry it more.  

Heat skillet and saute onions and sausage until done.  Add vegetables including peppers and stir up.   

Whisk together eggs, milk, and spices.  Set aside.  Shred cheese, set aside.

Put half the cornbread in bottom of pan (I used a 9x13, just in case a smaller pan would be too small).  Put half the sausage/vegetable mix on top, then half the cheese.  Repeat cornbread and sausage layers, then pour egg mixture over the top, and then the cheese.  Bake about 35 minutes.

tempeh chili

 This was tasty and smooth (none of the high acid heavy seasoning that gets me sometimes).  It's also easy to mix up so here's where I got the idea and below is what I did.

Ingredients

  • 8 oz tempeh, grated
  • 1 onion, chopped
  • 1 celery stalk, chopped
  • pickled jalapenos + marinated red pepper, chopped (or 1 chopped bell pepper)
  • 4 cloves garlic, minced
  • 1 pint jar passata (they used 3/4 cup tomato sauce + 1 cup water)
  • quart jar black beans (they used 1 can each black & kidney and drained and rinsed but i didn't because I'd cooked them myself)
  • 1 tsp cumin
  • 1/2 tsp salt
  • 1/2 tsp chili powder

Heat about 2 Tbsp oil and add the tempeh and cook until lightly browned, about 5 minutes. 

Add onion, celery, pepper and cook another 5-10 minutes.  Add garlic, cook another few minutes

Add tomato sauce + water combination, beans, spices.  Bring back to a simmer, and simmer for about 30 minutes.  

It's great topped with sour cream, green onions, cheese, etc. and served with cornbread

beans and cucumber and tomato salad

 I saw this on Facebook and it seems a good idea to try.

Prep and put into a large bowl:  

- 1 can garbanzos, rinsed and drained

- 1 can black beans, rinsed and drained

- 2 cucumbers, chopped

- cherry tomatoes, chopped

- container of mozzarella pearls, halved 

- 1/2 red onion  

- (kalamata olives)

- banana peppers or pepperoncini canned 

- parsley or other fresh herbs  

Mix dressing together then add to salad and mix up. 

- olive oil

- red wine vinegar

- juice from peppers

- dijon

- (maple syrup) 

So many other things can be added, whatever sounds good.

salsa for canning

When wanting to can some salsa, I cut this recipe significantly keeping the ratios.

  • 7 cups peeled, cored, chopped paste tomatoes
  • 1 cup seeded, chopped anaheim peppers
  • 1 1/4 cup chopped onion
  • 2-5 chopped and seeded jalapenos, to spice level taste
  • 2 cloves garlic, chopped
  • 1/2 cup lemon juice
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp ground cumin, oregano, cilantro (optional)

Combine all except spices and bring to a boil stirring constantly; lower heat and simmer 10 minutes.  Add spices and simmer another 20 minutes, stirring occasionally.  Put in hot jars, prepare, water bath can for 15 minutes for pints.

moros y cristianos, sort of

 This brown rice version of moros y cristianos was really flavorful.  It makes enough for four solid meals, so doubling the key ingredients would make enough to share and still have sufficient leftovers.

  • 1 cup short grain brown rice - follow instruction to cook (mine is 1.75 cup water to 1 cup rice, rinse rice, bring to a boil, simmer for 50 minutes, let it sit another 10 minutes with heat off)
  • 2 jars black beans
  • 1 onion
  • 1 poblano pepper
  • 4 cloves garlic
  • 1 T cumin
  • 1 tsp thyme
  • 1 tsp Mexican oregano
  • 1/2 tsp turmeric
  • 1/2 tsp chili peppers
  • 1/2 tsp smoked paprika
  • 15-28 oz diced tomatoes 
  • 1-2 bay leaves
  • 2 Tbsp apple cider vinegr 
  • salt and pepper 

Dice onion and pepper, saute in olive oil until onions is translucent.  Add garlic and cook until aromatic.  Add spices.  Then add tomatoes and black beans (drained is easier, or it's soupy).  Cook 10+ minutes to cook together.  Once to the right consistency, add the rice and cook together.

hominy casserole

 I love hominy and stocked up, but not really in the mood for posole.  This hominy casserole looks great and I'll make it today. 

HOMINY CASSEROLE

- 2 poblano peppers (broiled 5 minutes each side, then put into a bag to steam for 20 minutes, then skinned and seeded and chopped)

- 1/2 pound chorizo (or I used soyrizo), removed from casing and crumbled

- 1/2 onion, chopped

- 2 jalapenos, chopped (or a jar of diced chilis)

- 4 cloves garlic

- 2 15-oz cans of hominy

- 8 oz sour cream 

- 1/2 tsp cumin (depending on sausage flavoring)

- 1/4 tsp chili pepper

- 1/2 cup chopped cilantro

- 2 tsp lime juice

- 1-2 cups shredded cheese

- salt & pepper

INSTRUCTIONS

Prep poblanos as above.

In a skillet over medium-low heat, cook chorizo 8-10 minutes. Remove (leave a little grease) and cook onions and jalapenos until onions are translucent.  Add garlic, cook another minute. 

Remove from heat and add the diced poblanos, chorizo, drained and rinsed hominy, sour cream, spices, lime juice, and half the cheese.  Stir well, cover with the rest of the cheese.

Bake at 350 degrees about 30 minutes (uncovered).

pickled jalapenos

 A neighbor gave me a bunch of jalapenos earlier this year, with which I made "cowboy candy."  I did not care for that at all, and I'll reserve them for being chopped into cornbread in the future.  So when my plant started producing heavily, I decided to go the more traditional pickled jalapenos route, and I'm very glad I did because these are great.

  • jalapenos (I had about 3/4#)
  • garlic cloves (about 2, sliced) 
  • bay leaves, peppercorns
  • water & white vinegar in equal amounts (I did about 1.5 cups of each)
  • salt and sugar (about 1 T each)

Sterilize jars in water bath, heat lids.

Slice jalapenos and garlic.

Heat water, vinegar, salt, and sugar.  Bring to simmer.

Pack peppers and garlic into hot jars, add a bay leaf and peppercorns to each jar, pour brine over. 

PRocess water bath for 10 minutes.
