Cranberry muffins from here.
Ingredients
- 2 cups flour
- 1/2 cup sugar
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- (citrus zest, if desired)
Combine above in medium bowl. Then separately combine the following:
- 3/4 cup milk (or I use yogurt)
- 1/2 cup oil
- 2 eggs
- 1 1/2 tsp. almond extract (or substitute vanilla or citrus or whatever)
Add in the wet ingredients to the dry, then add in:
- 2 cups cranberries (fresh or frozen)
Put into 12 muffins cups, sprinkle tops with sugar if desired.
