cranberry muffins

 Cranberry muffins from here

Ingredients

  • 2 cups flour
  • 1/2 cup sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt 
  • (citrus zest, if desired)

Combine above in medium bowl.  Then separately combine the following:

  • 3/4 cup milk (or I use yogurt)
  • 1/2 cup oil
  • 2 eggs
  • 1 1/2 tsp. almond extract (or substitute vanilla or citrus or whatever)

Add in the wet ingredients to the dry, then add in:

  • 2 cups cranberries (fresh or frozen)

Put into 12 muffins cups, sprinkle tops with sugar if desired.  

Bake at 350 degrees for 25 minutes (ish).
